Classic Ice Cream Sandwiches -(*PERFECT FOR SUMMER!*)

  • 2 3/4 cups of all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips


STEP 1: Preheat oven to 375 degrees Fahrenheit:


STEP 2: Combine flour, baking soda, and salt in a small bowl.

STEP 3: Beat butter, brown sugar, granulated sugar, and vanilla extract in large mixing bowl.

STEP 4: Add eggs gradually to butter-sugar mixture.

STEP 5: Slowly add flour mixture into butter-sugar-egg mixture while beating.

STEP 6: Add chocolate chips.

STEP 7: Take two spoons (about a tablespoon size) and scoop and scrape cookie batter portions onto ungreased baking sheet.


STEP 8: Bake for 9-11 minutes, or until golden brown.

STEP 9: Cool on baking sheets for two minutes, then move to wire rack to cool completely.

STEP 10: Take a scoop of ice cream and place it in between two cookies.



STEP 11: Enjoy on a hot summer day with friends!

(*NOTE: you can also, if preferred, roll ice cream sandwiches in mini chocolate chips for extra fun! These make great desserts, but remember, they can be a bit messy so be sure to have napkins!*)
